The need for simplicity…and raw pasta!
I seem to blogging only once per week at the moment…you can tell it’s the crazy season! A friend was reflecting to me recently her very strong need to de-compress with the hectic insanity many people feel at this time of year. There is so much going on for everyone and it’s a lot of fun, but it can also be quite draining if you do not give yourself some time out still. For me, well, I am feeling a real need for simplicity for the next week or so leading up to Christmas.I have a load of work on and lots of other commitments as we all do, so the best way to simplify for me is in my diet. Ahh, gotta love the raw food diet for getting back to basics
.
So it’s going to be a juicy week for me. Lots and lots and lots of juiciness. Mmmmmm. Most people probably wait until after Christmas and New Year’s to detox but I’m feeling the need more than ever at the moment. In fact, if you’ve been reading my blog for the last couple months you will notice that the last half year seems to be that way for me! Big shifts and changes = simplify!
It feels really good to get juicier today onwards as I went to a local raw food picnic on Saturday and sampled plenty of delicious raw dishes…mmm…gotta love some indulgence before the simplifying. Surely that’s half the fun haha
. Met some awesome like-minded folk and as always, it feels soooooooo wonderful to connect with others with similar passions, drive and joys in life. One day I’m going to organise an International party where we can all be in the same place at once. Can you imagine us all…the thousands…tens of thousands of us all sharing carrot sticks and hugging…hahaha. It would be like our own rave without the lollipops and glow lights!! OK, maybe noooooot so easy but a nice thought right
For the picnic I made a dish my partner and I both love, and remember he’s a carnivore so it’s impressive! Plus, it’s incredibly simple and takes about 5 minutes to whip together – brilliant! My favourite kind of dish. Here’s the recipe for you to enjoy…it sounds so simple but it is tasty I promise you.
Zucchini spiralised or peeled
2 Tomatoes diced
1/2 red onion diced
1 packed cup basil, roughly chopped
1 yellow capsicum diced
2 tsps fresh chilli or 1 tablespoon of Mexican chilli powder. The latter is what I used.
Lots of dried dill
1 tablespoon dried garlic powder
Juice of 1 lemon
2 tablespoons olive oil
1 tsp avocado oil
Mix all ingredients through the zucchini and eat!
Enjoy the Christmas festivities and appreciate all the simple things
