Simply Delicious Salad Recipe
I just had to share this oh-so-simple, but oh-so-tasty salad recipe with you. This recipe will be in my new eBook Get Vital! which I am currently finishing writing as we speak. In the meantime, here’s a fresh and delicious salad recipe. I love it because it’s so easy to make but has such yummy flavour – particularly if you are a ginger fan.
Simply Delicious Salad
Serves 2
100g spinach leaves
2 handfuls of very fresh basil leaves
1/2 inch ginger, peeled and diced very finely (or minced but only use fresh ginger)
20 cherry tomatoes, halved
1 large avocado or 2 small
1/2 sweet purple onion, sliced thinly
Juice of 1 lemon
Sea salt and freshly cracked black pepper to taste
Optional: stevia drops
Toss the spinach leaves and basil in a bowl. Using half of the avocado (or 1 small) mush the avocado through the greens with your hands until it roughly coats the greens. Add the cherry tomatoes, sweet onion, ginger and the remaining avocado cubed into the bowl. Pour the lemon juice over the salad and add the sea salt and black pepper to taste. Toss and serve. Add a few drops of stevia to slightly sweeten the salad flavours. I prefer it this way but make it to suit your tastes. Yo could also trade half of the spinach for 50g of rocket (arugula). This gives it a fantastic spicy flavour.
I made this salad today and stuffed it into green cabbage leaves for “wraps”. Sooo good!
