Living in alignment and Creamy Herbed Cucumber Dip

On another note, I’ve also had a timely reminder the last few days of how being unwell feels! I haven’t felt poorly since I came out the other side of transition into this lifestyle and boy, am I grateful for my love of this lifestyle and the health and energy it brings! I have absolutely no desire to be ill as I used to be seemingly all the time! The last few days I’ve had to take a step back and allow myself the time to breeeeaaathe. When you run your own business, along with some personal events which have needed attention, it can be all too easy to push yourself too hard. My feeling poorly the last few days was my not so subtle reminder that I had been doing just that. The best part is that I have all the tools, information and acceptance I need within me for any situation – we all do. I am looking forward to some more soothing energy over the coming weeks and some serious self-nourishment. I always have self-nurturing activities as part of my daily routine, but as my friend Natalia Rose reminded me recently, when you are as pure of body as I now am (and that’s not an ego trip, it’s just the result of years upon years of physical and emotional cleansing), your body tells you a lot more quickly when something is even a little bit off! I used to have to be WAY out of sync to listen in to my body, but now, its subtle messages demand attention! These are all things I already knew but sometimes knowing isn’t enough. We get pushed to align even further with our Truth and if we don’t listen up, we get obvious signals that our highest self isn’t impressed!

As you all know if you’ve been reading this blog for a while, I love simple, fresh food. I often find myself creating recipes out of whatever is in the fridge and this led to another simple kitchen creation recently – Creamy Herbed Cucumber Dip. It was tasty, but it got me thinking less about this specific recipe, and more about how with a few tweaks, it could resemble one of my past favourites – Tzatziki. Are you familiar with the yogurt/cucumber dip? I have always minimised dairy in my diet for the health repercussions, but when I was in London, I was living in an area with many cheap Turkish groceries. They sold the most AMAZING hummus and tzatziki for insanely cheap prices and my house mates and I would eat tubs of each every couple of days. I lived there in my heavy drinking days too and it would often be a late night snack on the way home at some not so early hour of the morning… Those days are well and truly over but I still remember the sweet, minty, refreshing taste of Tzatziki and I am planning on re-creating it with a young coconut base in the next week. Stay tuned for my recipe. I am hoping it will be a winner! In the meantime, enjoy this refreshing dip.
Creamy Herbed Cucumber Dip
Meat of 2 young coconuts
1/3 large cucumber, peeled and roughly chopped
2 tablespoons young coconut water
1/2 inch ginger, chopped
1 bunch dill, roughly chopped
Juice of 1/2 lime
4 drops stevia (or more as desired)
Pinch cayenne pepper
Pinch Himalayan crystal salt
Blend all ingredients in a blender until smooth. Enjoy as a dip for veggies or on spiralised zucchini noodles.

I am always looking for neutral, non nut-based dips and spreads. This is so light — what a terrific summer idea, Case!
Thanks Gena! I actually think it would be even nicer if you just blend the flesh of the 2 coconuts and then grate in the cucumber (already peeled). Kind of like a Tzatziki chunkier texture.
I think I could just eat it with a spoon!
