Holy Guacamini!

Y’all know how much I love my avocados and guacamole by now. Well, tonight I wanted to make some yummy dip but I also had a bunch of zucchinis to use up so I invented…da…da…dum…the Guacamini dip! Boy was it ever yum! So yummy in fact that I of course couldn’t wait to share it with you here.
Here’s the recipe…
Guacamini Dip (you could also eat it as a soup – it is thick and lovely eaten straight with a spoon)
The ingredients:
2 small or 1 large zucchini
1 large avocado or 2 small
1/2 teaspoon cumin
1/4 teaspooon cayenne pepper
1/4 clove garlic (you could omit this or add more. I just felt like a subtle flavour tonight)
Juice of 1/2 lemon
Himalayan crystal salt to taste
Put all the ingredients except the avocado in a blender and blend until smooth and well combined. Add the flesh of the avocado and pulse for a few seconds so the mixture is well combined but still a bit chunky. Pour into a sipping bowl and eat with chopped veggies, put into lettuce or nori wraps, pour over spiralised zucchini pasta (or any other veg), or eat with salad.
I cut up carrot, beet and cucumber to dip into the Guacamini and added some oakleaf lettuce leaves and broccoli sprouts (added after the photos were taken) and ate these on the side with a scoop of the Guacamini on top. A gorgeous dinner and I made it in under 5 minutes. Double bonus!

This is a really good idea and looks tasty! I just got some Himalayan sea salt from Sustainable Sourcing https://secure.sustainablesourcing.com. I have not tried it out yet but I think I'll give it a shot in this recipe. Thanks for sharing!
