The Hearty Guacamole Salad

Happy Monday my peeps!

If you can’t already tell, I can’t get enough of any kind of homemade fresh, organic, raw guacamole at the moment (more so than normal). I have been making many variations of my classic and hot and spicy guacamole recipes and loving the different flavours and creations I have been producing.

Here is one of the creations for you all to enjoy – the Guacamole Salad. It’s extremely hearty, filling, super tasty and so versatile. There are so many ways you can enjoy this but first, let me share the recipe! It takes about 10 minutes to put together if you like it chopped very finely like I do, but you could also just make it with large chunks of salad veggies and cut a few minutes of the preparation time.

The Guacamole Salad


The ingredients:
2 avocados
large tomato
1 small bunch chives
1-3 big handfuls of coriander (cilantro) – use more or less dependent on how much you like. I use at least 3 handfuls because I love this delicious herb
1 clove garlic
1/2 cucumber
1/2 red bell pepper
Juice of 1 lemon
Few pinches of cayenne pepper
Himalayan crystal salt
Few drops of stevia (I used 5 drops)

Putting it all together:
Finely dice the tomato, chives, coriander, garlic, cucumber and bell pepper. Put the diced vegetables into a bowl and add the lemon juice, salt, cayenne, stevia and avocado. Mash all the ingredients together until well combined.

I served mine with some raw sweet potato “chips”, cucumber slices and cauliflower florets. This also tastes amazing straight up eaten with a spoon as a salad or mixed in with fresh green leaves, again as a salad, or rolled up into lettuce or cabbage leaves.


So yummy, so versatile!
