So fresh and so clean, clean!

It’s been a busy week! Two things to note in particular are that the Discover Detox Worldwide Program unofficially began on Thursday with the welcome call. Marlena and I have still been getting questions on whether it’s too late to join…and the answer is absolutely not! The program doesn’t officially begin until Monday and the welcome call (as all calls will be) was recorded so you can still join in the program and listen to the call recording to catch anything that you missed on how the program will run. Now, on to a couple of delicious recipes I want to share with you. I had these two recipes last night and oh my, they provided a perfect dinner meal. The fresh, raw salad based element from the “pasta” salad with tang, freshness and crispiness. Then the smooth, creamy, sweet, melt in the mouth perfection of a hot dessert of the Sweet Carrot Mash/Pudding, that is still completely cleansing supportive! Here are the recipes for these two gems for you:

Life In Full Colour “Pasta” Salad

1 zucchini, spiralised
1 large or 2 small beetroots, spiralised
1 carrot, spiralised
1 handful fresh basil, chopped
2 spring onions/scallions, finely chopped
1 clove garlic, chopped
Juice of 1 lemon
A few drops of stevia

Optional extras: chopped avocado, olives, a bit of high quality wholegrain mustard stirred through, fresh chilli, ginger etc.

Toss all ingredients together in a bowl and enjoy. You can add o remove anything you like to this versatile dish. Play around and find the combination that tickles your fancy. I also really like this dish with avocado massaged through it so the “pasta” softens and soaks up the creaminess of the avocado, but I also love it fresh and with the crisp bite that it has when not massaged or coated in thick sauces as pictured. Both are delicious!

Sweet Carrot Mash/Pudding

3-4 large carrots, chopped into small pieces
1 tablespoon of coconut oil or coconut butter
1/2 cup steam water from steaming the carrots, or 1/2 cup almond or sesame seed milk
1/2 teaspoon cinnamon
1/4 teaspoon cloves
Pinch sea salt
8 drops vanilla stevia or 1/2 teaspoon vanilla extract plus 1-2 teaspoons agave or pure maple syrup

Steam the chopped carrots until just soft. Put all the ingredients in a blender and blend until smooth and creamy. Serve the mash/pudding in a bowl, adding a sprinkle of cloves on top. If you are having a chocolate craving, throw a piece or two or high quality dark chocolate (70% plus cocoa content) into the mash and let it melt into a delightful gooey chocolatey mess that tastes totally divine! I added two cubes of 98% cocoa content chocolate and it was fabulous. Excuse the iPhone quality photo, but you can see just how melty delicious it was…
