Who stole the cookies from the cookie jar?

I am laughing so hard writing this right now! The title of this blog came to me a second ago and I started singing the kids jingle that goes with it. I certainly remember singing this school child jingle many (errr, many many many) years ago when I was a little child. I sang it loudly to my partner Alan, thinking he would join in the well known jingle. Instead, I was faced with this look:

This weekend we had dinner guests on two nights. I will be blogging again this week with the full dinner party menu I made for one of those nights (I wasn’t in charge of the other), but for now I wanted to share the cookies I made for the guests. While I normally like making raw food desserts for guests, if I make dessert at all (it’s not normally my focus), I am definitely not feeling the high sugar, dense nuts and seed combos that typically come with raw food desserts. Plus, I had a really big urge to bake. So cookies made with pure, wholesome ingredients it was.
Vegan Spelt Chocolate Chip Cookies
Makes 12 small cookies
Ingredients:
1 1/4 cups wholemeal spelt flour
1 teaspoon aluminium free baking powder
1/2 teaspoon baking soda
80grams 70% dark chocolate, chopped into your desired chocolate chip size
1/2 cup coconut oil
1.5 to 2 tablespoons agave or pure maple syrup (if you use the stevia below only use 1.5 tablespoons)
8 drops of NuNaturals vanilla stevia or 1 teaspoon of vanilla extract or an inch of vanilla bean seeds)
Heat the oven to 180 degrees Celsius (350 degrees F). Mix all the dry ingredients (including the chocolate chips) in a bowl. Warm the coconut oil until liquid and then mix with the other wet ingredients. Combine the wet and dry ingredients and mix well. Line a baking tray with parchment/baking paper. Place small tablespoons of the cookie dough onto the parchment paper, spread evenly. Bake in the pre-heated oven for 10 minutes. Remove from the oven and allow them to cool. Dig in and enjoy with friends and family.
These cookies take about 20 minutes to make including the baking time. How quick and easy is that and it certainly beats reaching for a white flour, white sugar, non-vegan cookie anytime and then suffering the health consequences! All my guests loved them so hopefully you and your friends will too!
