Serious Raw Dessert Satisfaction

Hi everyone,

I hope you all had a brilliant weekend. Mine was all work and little sleep but I did have a great time yesterday at the Eco-Faerie festival where I had a stall and did a short talk and food demo. It was great fun and the people and place had such an amazing energy about it. There’s a few photos from the day below. The recipe I demonstrated at the festival…sorry no pic, it got gobbled up very quickly by people wanting to try this deliciousness:

Raw Chocolate Pudding

1 avocado
8 fresh medjool dates (soaked in water for 2 hours)
1 tablespoon extra virgin coconut oil
2-3 tablespoons of the date soak water
2-3 heaping tablespoons of raw cacao powder (or high quality cocoa powder). You could also use carob powder ( I recommend starting with 2 tablespoons for carob)
Pinch of cinnamon
Optional ½ teaspoon vanilla extract

Blend all ingredients in a food processor fitted with the S blade until creamy and well combined. I served this in a glass with fresh mixed berries as a parfait. To do this, spoon some berries into the bottom of the glass, top with a good heaping of the chocolate pudding and then add another spoon of berries to the top. Sprinkle with a little cinnamon and/or cocoa powder.This is also great as a dipping sauce for fresh fruit, particularly banana slices, or just eaten straight out of a bowl. YUM!
