Now, after all that excitement, I have a delicious recipe to share which I LOVED tonight. Lots of CAPS in my blog today – can you tell I’m hyped? ;) I definitely recommend you try this one. It’s yummy and super clean and detox-friendly!

Moroccan Carrot “Couscous” Salad

2 cups cauliflower florets
2 large carrots, peeled and chopped
1 avocado, cubed
1 big handful fresh basil, roughly cut
1 stalk fresh rosemary, de-stalked and cut finely
10 olives
2 spring onions, cut finely
1/4 red onion, finely slices
1 small knob fresh ginger, peeled and diced
1/4 cucumber, diced
1/2 yellow capsicum, chopped
10 cherry tomatoes, halved (I didn’t have any on hand tonight to include but they would taste great!)
Juice of 1 lemon
1 teaspoon cumin
2 teaspoons curry powder
1 teaspoon turmeric
2 tablespoons tamari or nama shoyu
Sea salt and black pepper to taste

Put the cauliflower florets into a food processor fitted with the “S” blade and process until a grainy consistency, similar to rice. Place this into a big serving bowl. Put the cubed carrots into the food processor and process until very finely chopped, much finer than the cauliflower consistency but before it becomes “mush” (for lack of a better term!). Place the carrot in the bowl with the cauliflower.

Add the lemon juice, spices and tamari/nama shoyu and mix together well. Let the mixture sit for at least ten minutes to soften and marinate. You can leave it for many hours or overnight also.
Add the remaining ingredients and toss the salad.
Serve and devour with gusto! Yum!

    This is an outstanding salad, I may say that I am new to raw food and I am astonished of how great it is. I tried this salad today and I just loved it! and I did the lemon coconut flour balls that I have in the freezer right now waiting to devour one.. I can’t wait!!

    You may not believe this but I let out the cauli, cucumber, rosemary, avo and tomatoes and added goat cheese.
    It was soooo good. I put in two more carrots instad of the cauli and ate the whole bowl! Love the seasoning. Keep them coming
