Simplest, freshest, delicious-est dressing!

I’ve missed you! It’s been a busy week with lots and lots of classes and I’ve missed my bloggy and you guys! But I’m back and boy do I have a so-simple, so-yummy dressing to share with you!
I made this dressing last week before a night detox class I was running. I had very little time to pull something together and feast on, and I also wanted something very light but substantial as I was very hungry but knew I wouldn’t get a chance to eat again later. So, with very few ingredients lurking around the kitchen, I whipped up this delicious dressing and absolutely loved it! I definitely recommend you try this fresh, tangy, yet creamy dressing soon!
Sweet Capsicum and Brazil Nut Dressing
1 red capsicum, chopped
2-3 tablespoons of raw brazil nut butter
Juice of half a lemon
Big handful of fresh basil
Stevia to taste (you want it to be slightly sweet but not a dessert!)
A good shaking of sea salt and black pepper
Throw all the ingredients into a blender and blend. You may need to add a little water – I added about 2 tablespoons. I have also suggested 2-3 tablespoons of the nut butter as it’s really up to you how creamy you want the dressing. I used two tablespoons but I know many people would prefer three. That’s it! Super fresh, super tangy, yet creamy enough to satisfy!
I had little time to create the salad to pour the dressing over, so I just threw some baby spinach leaves, chopped cucumber and kelp noodles together into a bowl and massaged through the dressing. Divine!
