Now for today’s mass of veggie recipes! I’ve got three new recipes to share with you, and if you haven’t already tried the two cabbage recipes I posted last week, get to it – they’re so tasty! :) Trust me when I say these are worth trying…don’t let the boring association that often goes with cabbage put you off.

Lately I’ve been loving my fresh juices and salads as always, but I’ve also been enjoying the odd sugar and fruit -free green smoothie (I feel best with minimal sugars in my diet), new sauces to smother baby lettuces and spiralised zucchini pasta and many different cooked veggie side dishes.

Although it’s been hot here, I’ve been loving creating new cooked veggie sides for my partner and I, mine always alongside a huge raw vegetable salad.So here are the recipes for you…a smoothie, a sauce and a veggie side.

Mojito-Inspired Green Smoothie

Mojitos were one of my most adored cocktails when I was a drinker. The combination of fresh tart lime, sweet mint and icy goodness made my heart go all a-flutter. Or maybe that was the booze. Either way, it was LOVE. If I was to have a cocktail now, I’d be reaching for a mojito before any other cocktail mix without hesitation. Never mind the fact that I would be flat on my face and forgetting my name after a few sips.

With the hot weather of late, I was transported back to summer weekends sipping mojitos and decided to get into the kitchen to re-create the flavour but in a far more healthy, alkalising and nutrient dense way – the green smoothie.

Ingredients:

1/2 an avocado

1 handful of baby spinach

1 cucumber, chopped

1 small handful of mint leaves

1 tablespoon of basil leaves

Juice of 1.5 limes

1 tsp lime zest

Vanilla stevia (start with 15 drops and add more to reach your desired sweetness – I used LOTS)

1 cup of water (use more or less to reach your desired consistency)

2 cups of ice

Directions:

Blend all ingredients except the ice until smooth.

Add the ice and pulse until well crushed. You can drink your smoothie with crushed ice or you can keep blending until smooth. Add a little umbrella and sip away :) .

Raw Basil Avocado Pesto Sauce

This sauce is amazing on spiralised zucchini or kelp noodles, over salads or as a dipping sauce for crudites. You could also eat it as a raw soup. It’s so tasty and refreshing and green.

Ingredients:

1 large zucchini, chopped

1/2 an avocado

Juice of 1 lemon

1 tsp lemon zest

1/2 cup of basil

1/2 cup of water (I used just enough to help the blending process but use less or more as you like)

1/2 tsp of sea salt or herbamare

5 drops of stevia

Directions:

Blend all ingredients until smooth and serve. This is also wonderful with a 1/2 teaspoon of ground cumin.

Baked Spiced Cauliflower

Remember my love of the spice combination in this dish? Well that hasn’t changed! I’ve since been experimenting with the same combination of ingredients but with another beloved vegetable of mine – cauliflower.

This is a great recipe to have with almost any meal – vegetarian, raw, fish, whatever. It is light, comforting, quick and easy to make and also combines with starches and animal products for the food combiners out there.

Ingredients:

1/2 a cauliflower, cut into florets

2 teaspoons of coconut oil

1/2 teaspoon of herbamare or sea salt

1 teaspoon of cumin

3/4 teaspoon of cinnamon

Black pepper to taste

Directions:

Warm the coconut oil so it is liquid.

Place the coconut oil and spices in a bowl and mix will.

Add the cauliflower to the bowl and coat with the oil and spices.

Place the cauliflower on a baking tray and bake until just golden brown.

Serve alongside a salad or toss it through a green salad like I did.

  1. Mmm… that avocado basil sauce sounds delicious! I’ll have to try it as soon as I have room in my fridge again! (it’s currently been taken over by Thanksgiving!!) Love roasted cauliflower, too!

    Veggie recipes that are making me happy lately? Lots and lots of roasted veggies! We’ve been eating roasted squash, cauliflower, broccoli and brussels sprouts lately!
