Raw Vegan Cheesy Carrot Sauce and only 24 hours until The Juicy Life begins!

I have fond memories of my mother making us cauliflower cheese. We were rarely served the version with oodles of gluey, pasteurised cow’s cheese (nice one mum!), but we did get a healthier version with extra veggies that was light on the sauce and without cheese. It may not sound great to you but I assure you it was really yummy!

Due to this experience of healthier versions of cauliflower cheese, I have known for many years that a delicious dish reminiscent of the traditional, high fat cauliflower cheese is possible without the health drawbacks.

Today I was craving a cauliflower cheese experience (yes it’s an experience, not just a recipe…who’s with me on this?!) and while showering my brain got busy. Anyone else dream up recipes in the shower?

In my mind, I started to put together a simple, quick and easy to make cauliflower cheese recipe that would mimic what I loved most about the traditional dish – the burst of cheesy flavour, the comforting warmth and of course my favourite – the cauliflower.

Of course, as almost always happens after a recipe creation session in the shower, I headed into the kitchen to act out my fantasy….and hoped for the best.

The result? A light, delicious, comforting, creamy sauce with a fresh cheesy flavour, sweetened with carrot (which also cuts the fat content drastically while upping the nutrition content) and a warm, comforting hint of nutmeg, cumin and cinnamon to add complexity and depth to the sauce. Overall, it was a rating of YUM.

Raw Cheesy Carrot Sauce

Ingredients:

3 large carrots, chopped

1 cup of nutritional yeast

Juice of half a lemon

1 teaspoon of cumin

Pinch of nutmeg

Pinch of cinnamon

Sea salt and black pepper to taste

Optional: a few drops of stevia to make the flavours really pop

Cauliflower for baking or dipping (or other vegetables you like) – see notes below

Directions:

Place all ingredients except the cauliflower in a high speed blender.

Blend until smooth. Note: If you don’t have a high speed blender you may need to add some water to get the ingredients to blend. Start with a little water and add more as necessary.

Taste and adjust seasonings as you like. You could make this much more thick and creamy by adding sunflower seeds, hemp seeds or some avocado but I love that this is so light and refreshing and a great low fat option.

I enjoyed this sauce as a dip for raw cauliflower making it an entirely raw dish, plus I added some sliced cucumber and carrots later.

I also baked some cauliflower in an oven until golden brown (I dry baked them but a little coconut oil or organic butter added to the cauliflower would be amazing too) and then placed the baked cauliflower in a shallow oven dish. I then smothered the cauliflower in the Cheesy Carrot Sauce and put it back into the oven to warm for a few minutes. Holy yumballs!!

I recommend you try this both ways!

    this sounds so yummy, I have a questions about the cup of yeast.. Is this a problem with candida related issues? Can I eliminate yeast and use sunflower seeds as you suggested? Not sure about the impact of yeast … Your feedback and experience would be so helpful – thanks!

      Hi Leslie,
      I have yet to hear of one person having trouble with Nutritional Yeast when they are trying to re-balance the yeast and bacteria in their body. Avoid baker’s and brewer’s yeast, and certainly the yeast in beer, but nutritional yeast should be fine for you. Always try it for yourself though. Have some one day with the rest of your day being a typical day of food, and hen wait 72 hours to notice any chance in your health or symptoms.
      If you do want to sue sunflower seeds instead, they would still be lovely! I suggest soaking them first and adding more of the spices and another half of a lemon juiced.
