Easy Raw Vegan Recipe: Carob Almond Love Cups
I don’t know about you but that title just makes me all giddy inside. Carob + almonds = heaven, in my opinion.
Not too long ago I would have thought you were crazy if you told me I would have a love affair with carob one day. I was a dark chocolate lady all the way and carob totally grossed me out.
When I started to realise my occasional poor sleep and crazy wired head space were due to my chocolate intake, whether it be raw cacao powder or the roasted, creamy 85% kind, I decided to give carob a proper shot.
As if I would ever go without dessert and sweet treats! Pfft to that.
After trying it countless ways, in avocado puddings, smoothies, with berries in ice cream, with coconut in bite size desserts and endless other ways, I was a total convert.
Today I am the biggest carob lover of them all.
The moral of the story: if you don’t feel good on chocolate, pretend you like carob until you do

Today I have another carob recipe to share with you that I totally adore. It’s fun, easy and quick to make and you may already have the ingredients on hand – they are staples for most clean eating kitchens.
Introducing…
Carob Almond Love Cups
Why Love Cups? Why not I say!
Ingredients:
3 tablespoons of carob or cocoa powder (use raw if you want these raw)
1 tablespoon of coconut oil
5 tablespoons of pure water (or add more if it seems too thick)
4 dropperfuls of stevia (or more to taste)
¼ teaspoon of cinnamon
1 teaspoon vanilla extract
20 raw almonds (ideally soaked and sprouted or fermented but just raw is fine too)
Directions:
Melt the coconut oil if not already liquid in the oven or over the stove. Place in a bowl with the carob powder, water, stevia, vanilla and cinnamon. Stir well until smooth and there are no chunks of powder.
Add the almonds and stir once.
Place mini cupcake/muffin cases on a plate. Using a teaspoon, drop a spoonful of the carob/almond mixture into each muffin case.
Pop them in the freezer for 20 minutes or until hard but not icy frozen.
Eat!
Let me know if you try them. There are so many ways you can vary these too…add dried fruits, fillings, seeds, other nuts, coconut…endless possibilities and I have a few in mind for future posts so stay tuned!

Oh the enthusiasm in your voice, Casey! I simply can’t resist…I’ve tried carob a few times but to no avail. Just don’t – didn’t – like it. The jar has been sitting on the kitchen shelf looking at me but I kept turning a blind eye (I know, it’s not nice to be ignored…). Not anymore. I will give it another go with these love cups, if only for the bf’s sake, he likes carob.

Hi Casey. I’m gunna try these. Do you know who David Wolfe is? He suggests combining cacao with carob powder for maximum nutritional value. I forget the science behind this but something to do with their chemical make up, combined. I will try to locate this info and get back to you. I love your site! I certainly do know David. I know his work well. There are plenty of great things about cacao but I don’t consider it a health food for most people as it’s so stimulating and can cause many health issues if over consumed. Enjoy it in small quantities though.

Why not indeed? LOVE these Casey! I asked for coconut oil for Christmas (it’s hard to find/expensive here) and got it, but have barely used any. I’ll definitely try these soon, and can’t help imagining salted sunflower seeds, or salted roasted pistachios, replacing the almonds

Are you sure it’s supposed to be TEN tablespoons of water? I just made these and, I’m sorry, but they were a huge disappointment. The mixture was just sooo runny but I kept thinking “it’ll set when they freeze”. Well, it sort of did, after a long time, but now I have a plateful of carob ice with almonds in my freezer. I feel sad for wasting the almonds :<

I’m so sorry these didn’t work out for you! I definitely used 10 tablespoons and they came out great but maybe it has something to do with the different carob powders we used…? I’m not really sure. I’ll definitely adjust the recipe in case anyone has the same problem you experienced. Thank you for sharing and I hope you can at least enjoy the almonds from the carob cups!
