Raw Pumpkin Pie Chai Smoothie

pumpkinchaismoothietop

Oh man. This smoothie is to die for.

I don’t say that lightly, although I definitely don’t want you to keel over for it, so maybe it is a figure of speech this time. Sort of.

I mean, I am a health and wellness coach (i.e. I am all about you being alive and well), but this really is the bomb.

This smoothie is not only freaking delicious, it is also packed full of amazing nutrition. Even the spices have nutritional benefit, particularly cinnamon – my favourite!

It’s also extremely easy to digest. Why? Because it’s mostly juice! Not only that but blended foods are also wonderfully easy to digest.

The blending process breaks down the cellular structure of fresh fruits and vegetables so that the nutrients are more available, essentially making them pre-digested. This equals less work for your stomach!

Juicing and blending your food for one or more meals a day is an incredible way to boost your health and energy, help nutrients to be better absorbed, and if you have digestive issues already, juicing and blending will not tax your sensitive digestion nearly as much.

You could get equal nutrient absorption from eating whole fresh fruits and vegetables, but the fact is that you likely don’t chew well enough. Your food needs to be chewed to liquid to get the full benefit. There are few people who do this. I always have to remind myself to chew more thoroughly and even then I don’t often do so. It’s an art you need to keep practicing.

As a sidenote, if you are eating in front of the television, while reading or working, it’s probably even more unlikely you are chewing well. Next time you park your cute butt on the lounge and throw on a mini-series while noshing, notice how unconsciously you are eating. It’s very enlightening!

That’s not to say you need to go without your dinner time company, but as much as possible, aim to eat mindfully. Your digestion and waistline will thank you.

Before I unveil the magic that is this recipe, I want to remind you of the debut of a fun party happening at my place this Saturday that I am inviting you to (limited spots only). Dum dum dum…

Did you just pee your pants a little? Yeah, me too Winking smile.

Raw Pumpkin Pie Chai Smoothie

(Adapted from Natalia Rose’s Pumpkin Pie In A Bowl)

A refreshing, hearty smoothie that can be enjoyed as breakfast, lunch, snack, dessert or anytime. It is wonderful with ice on a warm day, or slightly warmed on low heat on the stove when it’s cool outside. Most of all…

Just try it! Smile

Ingredients:

1 avocado

1 cup of raw sweet potato, peeled and cubed

1 kilo of carrots

1/2 head cos/romaine lettuce

Stevia to taste

Chai spice (either buy premixed or use the following – 1/4 tsp cinnamon, 1/8 tsp ginger, 1/8 tsp ground cardamom, 1/8 tsp allspice, pinch nutmeg, pinch cloves)

Directions:

Juice the carrots and lettuce. How much juice you get will depend on the size of your carrots and lettuce. Add more of each to get 1 litre/32oz. You want to use 3/4 carrot juice to 1/4 cos/romaine juice.

carrotcosjuice

Place the cubed sweet potato, avocado flesh, spice and juice in a blender. Add 3 dropperfuls of liquid stevia and blend well. If you have a low speed blender you will need to blend for an extra minute or two to ensure the smoothie is smooth and creamy.

Taste the smoothie and adjust the stevia and spice to your liking. I like to add a full tray of ice cubes and blend until smooth and creamy again, but this is optional. Alternatively you can serve over ice, straight up or warmed slightly as suggested above.

Enjoy this fantastic drink, or grab a spoon and eat it as a soup. This smoothie makes me so happy Smile.

  1. WOW, this look delicious!! I was worried at first that we would only get the recipe if we joined your Party…it’s a bit far to come from Denmark. If I lived close by I would be there in a flash!!
Will be trying this smoothie out…

  2. Kat says:

Yummy! I’ve made one like that before but also used vanilla. I wanted to make NR’s pumpkin pie ina bowl more green and chock-full of minerals. What did you have this with with? Like a dessert after dinner or as a snack?

  3. Hi Casey! I’ve always wondered, with recipes like this (and the PPIAB), is the digestion time quicker. Do I need to wait a full three hours before switching food groups for good combo purposes? Thanks!

  4. Marlena says:

Hi Casey- where would you recommend I get Chai Spice from? (either online or in Perth). I can only seem to find the teabags!

    • Casey says:

      Hi Martina,
      Thanks for stopping by :)
I actually made up my own for this recipe but it works wonderfully with “Mixed Spice” too, so just buy that. If you want a little extra you could add a pinch of ginger and cardomom but mixed spice tastes great!
      Enjoy!

  8. Tracy says:

Hi Casey, I made this tonight for dinner. I used pumpkin pie spice blend because I couldn’t find chai spice. So refreshing on such a hot day! Thank you :)

  9. Nina says:

Thanks, Casey! Your recipes are amazing! Raw food tastes incredible and is filling too! Satisfying and peace of mind, I like it! Look forward to when the conventional world finds out about it! Love Nina

    • Casey says:

So glad you are enjoying my recipes Nina! Keep on doing so and thanks for saying hi! Yes will be great when the world catches up to eating for health! :)

  10. Jaxs says:

Hi, when you say juice the carrots and lettuce, do you mean juice as in a juicer or juice like in a vitamix? thanks for a good looking recipe and could be a diabetes(me) delight!!

    • Casey says:

      Hi Jaxs,
Glad the smoothie sounds good to you – it is amazing!
Yes juice the carros and lettuce in a juicer. I’d say blend if it was in a vitamix.
