The Easiest Raw Salad Dressing Ever

Sometimes what I eat is so simple that I don’t think to post it here on the blog, even if it is ridiculously tasty. Then a client will ask me to share some of my most simple meals and it reminds me that some of the things that are like clockwork to me are not necessarily things you know about.

Today’s recipe is a perfect example of this.

For salad dressings, salads and dips, one of my all time favourite ingredients is this…

EdenFoodsMustard

That, my friends, Is Eden Food’s Stoneground Mustard. It has only four ingredients: mustard seeds, unpasteurised apple cider vinegar, water and sea salt. I love how short this ingredient list is and yet it’s an unbelievably tasty product.

I use this mustard all the time when I want to add a lot of flavour to the most basic of recipes. I often even eat it straight up with steamed cauliflower, carrots and parsnips as dessert to my salad and/or raw soup. So good.

Here are two of my favourite ways to enjoy this ingredient, to make the quickest and easiest snacks and meals you can imagine.

“Honey” Mustard Dip

I originally got this idea from my friend and colleague Marlena and now enjoy it every week. It’s simply high quality (i.e. sugar, refined salt and preservative free) mustard with drops of stevia to make it sweet, giving a honey mustard effect.

Take a spoonful of mustard (and sing Mary Poppins “It’s a spoonful of sugar” for extra effect…)

Add your stevia drops to taste (you only need a few). Stir and enjoy! I love this as a dip for carrots. It really hits the spot for me late afternoon for a crunchy snack. I’ve also been known to take this to the movies.

Sorry to those of you who have ever sat beside me and had me crunch in your ear. Yes, I am one of those people Winking smile.

Second up is my Every Day Easy Lemon Salad Dressing. This is quite possibly the tastiest and easiest salad dressing EVER.

Three ingredients, about 30 seconds and you’re done.

Boom!

Every Day Easy Lemon Salad Dressing

Your three ingredients:

Juice of half a lemon, 1/2 a tablespoon of high quality mustard and a few stevia drops (to taste).

Mix the ingredients together and voila!

Serve over salad, steamed, baked, grilled or sautéed veggies, or even as a light dipping sauce for sushi rolls, crudités or cheeseburgers.

(Did I throw you off with that last one? Gotcha Winking smile)
