Back in my cocktail days, I was a big fan of Mojitos. Their fresh, clean, sweet taste with that delicious mint, lime and basil…and of course the booze! Now that was poolside bliss for me.
These days things look a little different, which I couldn’t be happier about. Fortunately I can still get creative with my liquids and recreate scenes of spilling my drink all over my sparkly sequin top if I wish

Now for the yummy juice recipe I have been loving madly!
Spicy Icy Virgin Mojito Juice
Ingredients:
3 limes
3 large cucumbers
1 large head cos/romaine lettuce
6 stalks kale
1/2 cup basil, loosely packed
1/3 cup mint, loosely packed
2 trays of ice (for the whole recipe…drink half with1 tray then use another tray later for the rest)
Pinch of cayenne pepper (or to taste)
1 dropper of plain stevia (or to taste)
Directions:
Put all ingredients except the ice, stevia and cayenne through a juicer. Add the juice into a blender and these 3 ingredients. Pulse until ice is crushed but not completely blended. Serve in a cocktail glass (or Guinness pint glass like I did!) and sip away.
This recipe makes a lot of mojito juice. I enjoyed it in two parts over a day of juicing. Hope you enjoy it too!
