Creamy Herbed Cucumber Dip
Meat of 2 young coconuts
1/3 large cucumber, peeled and roughly chopped
2 tablespoons young coconut water
1/2 inch ginger, chopped
1 bunch dill, roughly chopped
Juice of 1/2 lime
4 drops stevia (or more as desired)
Pinch cayenne pepper
Pinch Himalayan crystal salt
Blend all ingredients in a blender until smooth. Enjoy as a dip for veggies or on spiralised zucchini noodles. Alternatively you could keep the cucumber out of the blended mixture and garte into the blended coconuts for a chunkier texture - yum!
