Spicy Kick Spaghetti

Makes 2-3 servings

2 zucchinis spiralised or peeled into long strips

2 tomatoes diced

1/2 red onion, thinly sliced

1 packed cup basil, roughly chopped

1 yellow capsicum (pepper), diced

½ red chilli (jalapeno) or 1 tablespoon of Mexican chilli powder

2 tablespoons dried dill

1 teaspoon dried garlic powder

Juice of 1 lemon

2 tablespoons Extra Virgin Olive Oil

Himalayan crystal salt and freshly ground black pepper to taste

Olives (optional)

Distribute the spiralised zucchini over bowls. Add half of each ingredient to each bowl and toss through. Quick, easy and delicious!
